The Art and Science of Kerala Sadya

A Kerala Sadya is far more than a meal — it is an elaborate gastronomic symphony served exclusively on a fresh, vibrant green banana leaf. Traditionally prepared during Onam, weddings, and special family gatherings, a full Sadya can feature up to 24 to 28 distinct vegetarian preparations.

The Layout of the Leaf

Notice how the banana leaf is placed before you: the narrow tip points strictly to your left. Each dish has an exact designated position on the leaf!

  • Top Left Corner: Salt, banana chips (Upperi), sweet jaggery coated banana pieces (Sarkara Varatti), and crisp papadam.
  • Top Row (Left to Right): Mango pickle, lime pickle, Inji Puli (tangy ginger jaggery reduction), Thoran (stir-fried veggies with coconut), Olan, and Avial.
  • Center: A generous mound of steamed red Matta rice.

Course Order

First comes golden Parippu (yellow lentils) topped with homemade ghee. Next, rich aromatic Sambar is poured. Then comes tangy Rasam, followed by soothing Moru (spiced buttermilk). Finally, the meal culminates in decadent Palada Payasam or Ada Pradhaman dessert!
